Hyatt Regency Tokyo Launches Citrus Blossom Afternoon Tea with Pierre Hermé Paris

Hyatt Regency Tokyo will offer a limited-time spring-to-early-summer afternoon tea in collaboration with Pierre Hermé Paris, starting April 1, 2026. Titled "Citrus Blossom Afternoon Tea," the collection evokes the transition from budding spring to early summer through the fresh fragrance of citrus and the delicate nuance of flowers.

The menu pairs Pierre Hermé Paris's refined pastries with light yet layered savory bites crafted by Hyatt Regency Tokyo's kitchen team, creating a colorful and elegant afternoon experience. A new format called "Café Gourmond" is also available, allowing guests to enjoy four Pierre Hermé Paris sweets alongside a drink of their choice in a more casual setting.

Sweet collection

Sweet collection

Seven sweets highlight the interplay of yuzu, lychee, rose, and orange blossom — combining the freshness of fruit with the aroma of flowers. The menu features contrasting flavors of bright acidity, subtle bitterness, and gentle sweetness, all underpinned by Pierre Hermé Paris's signature approach to "designing with fragrance." Presented in a variety of forms — tarts, mille-feuilles, glass desserts, choux, and macarons — each piece layers texture and aroma in a way that captures the feel of the changing season.

  • Tarte Infiniment Yuzu — Yuzu cream and confit layered together for a vibrant, nuanced flavor
  • Millefeuille Jardin de l'Atlas (Café Gourmond) — A light and elegant mille-feuille fragrant with lemon and orange blossom
  • Emotion Ispahan (Café Gourmond) — An iconic Pierre Hermé Paris creation harmonizing lychee, rose, and raspberry
  • Cheesecake Satine (Café Gourmond) — A refreshing, airy cheesecake with notes of passion fruit and orange marmalade
  • Chocolat Arabella — A chocolate dessert with hazelnut praline and accents of banana and ginger
  • Chou Envie — Mascarpone cream with vanilla and violet, topped with a scattering of berries
  • Macaron Jardin de Mizo (Café Gourmond) — Jasmine-flavored cream and wild strawberry compote in a delicate, lingering finish

Hotel-Made Savory Dishes

The savory selection consists of five pieces created by Hyatt Regency Tokyo's kitchen team. Inspired by the culinary sensibility of the Argentine head chef, the dishes weave in subtle South American and Mediterranean influences while drawing out the best of each ingredient.

Savory dishes

From golden-baked brioche and pastry to fresh seafood with bright acidity, and herb-and-spice-accented bites, each piece presents a different contrast in temperature, texture, and aroma. The combination of richness and lightness, creaminess and freshness complements the sweetness of the desserts while also satisfying as a meal.

  • Mini Croque Monsieur — A warm and hearty bite with Asakusa ham, Gruyère, and Mornay sauce
  • Heirloom Tomato Bruschetta (V) — The sweetness of high-sugar tomatoes balanced with the depth of tapenade
  • Asparagus Pissaladière — A savory baked pastry with caramelized onions and white anchovy
  • Sea Bream Ceviche — A refreshing plate of sea bream with coriander-lime dressing and crispy corn
  • Chorizo Croqueta — A Spanish-style croquette with smoked paprika and green pea aioli
