Nina at The Ritz-Carlton, Tokyo Opens Reservations for Its First Christmas and New Year Collection

Nina at The Ritz-Carlton, Tokyo, the patisserie run by Nina Métayer, a top pastry chef active around the world, centered on Paris, France, is taking reservations from Monday, October 5, 2026 for a range of festive sweets to enjoy at home with family and friends, starting with five Christmas cakes. The patisserie is located at The Ritz-Carlton, Tokyo in Tokyo Midtown (9-7-1 Akasaka, Minato-ku) and opened on April 1. The hotel's Christmas takeout menu, a three-tier osechi for home and a Japanese hors d'oeuvre set are also on sale by reservation in limited quantities.

Métayer was named World's Pastry Chef 2024 by The World's 50 Best Restaurants. Her original sweets, inspired by nature and the changing seasons, have earned international acclaim, and she now runs her own brand, Délicatisserie.

This year's festive collection was inspired by the French musical "Une seconde avant Noël" (One Second Before Christmas). It aims to capture the excitement of a Christmas spell and the precious time spent with loved ones, with gentle flavors, surprising ingredient pairings and a variety of textures.

La Surprise (ラ・シュプリーズ)

A playful, elegant signature bûche de Noël. Opening the delicate cocoa tuile dome reveals a charming wooden horse, a gentle nod to Christmas memories from childhood. The cake has depth of flavor, with the comforting warmth of spice, the rich sweetness of caramelized apple and the fresh aroma of bergamot. Fresh fruit and rich cream add a light note to the Christmas Eve table.

Inspired by the traditional mistletoe bouquets given in France during the holiday season to wish for good luck, this cake has chocolate carved by Métayer into a sculptural, artistic form. A cream delicately scented with candied lemon and thyme is layered with rich chocolate mousse and wrapped in fruity dark chocolate. A fresh citrus accent and the depth of cacao come together in a pastry made for the festive season.

Strawberry Shortcake

The hotel's long-loved signature strawberry shortcake has been reimagined with Métayer's refined sensibility as a Japan-exclusive Christmas cake. A modern square shape is generously layered with light vanilla sponge, plenty of strawberries and rich yet smooth cream. The simple cake lets the quality of its ingredients stand out. It contains no alcohol, so people of all ages can share it.

About Pastry Chef Nina Métayer

Nina Métayer

Born in La Rochelle, France, Métayer decided to study boulangerie and viennoiserie during an exchange program in Mexico. After gaining experience in Australia, she returned to France and studied in earnest at the prestigious culinary school Ferrandi. After graduating, she worked as a pastry chef at renowned hotel restaurants including Le Meurice (a palace hotel) and Le Raphael (a five-star hotel). She then joined Jean-François Piège and was entrusted with developing the dessert menu for the newly opened Le Grand Restaurant, which earned two Michelin stars just six months after opening. She rose to prominence when she was named best pastry chef for three years in a row by leading publications: Le Chef in 2016, Gault&Millau in 2017 and GQ in 2018. In 2017 she became head of sweets creation for the French and international divisions of Café Pouchkine. In 2020 she opened Délicatisserie, an online-only boutique that takes orders through its website. In 2021 she opened a corner at the Paris flagship of the department store Printemps Haussmann. She has continued to expand her presence in France, with stores in her hometown of La Rochelle and on the Île de Ré, as well as several in Paris.

A "palace" hotel is the highest classification for luxury hotels in France, ranking above five stars.

The Ritz-Carlton, Tokyo's Christmas takeout menu is made for a Christmas Eve at home with loved ones. For the main dish, diners choose between two options. One is a set of "Oven-Roasted Baby Turkey with Herb Butter" and "Celeriac Potage." The other is a set of "Oven-Roasted Domestic Beef Sirloin" and "Manhattan-Style Seafood Chowder." A special party menu adds festive dishes such as a three-layer meat pie scented with black truffle and a smoked salmon salad with caviar. Diners can enjoy the hotel's holiday dining at home.
