The financiers and madeleines are made with carefully selected ingredients, pursuing a balance of fragrance, richness, and moist texture. Rather than flashiness, they prioritize something you'll want to eat again and again, valuing flavors that quietly accompany daily life.

The main products feature original flavors unique to the shop, combining Japanese ingredients with traditional French baked goods. They offer 6 types of financiers and 3 types of madeleines with surprising combinations that propose new ways to enjoy baked goods.

Adding a touch of surprise and excitement to the world of traditional baked goods is also part of the "experience" that BROWN TABBY cherishes.
These cat-shaped financiers are special items unique to this shop, born from specially crafted original molds.

Classic Five Flavors
Both madeleines and financiers are available in five orthodox flavors that you'll want to pick up again and again in daily life.
Plain, Chocolate, Earl Grey, Cheese, and Caramel Macadamia are finished with flavors where each character can be clearly felt while honestly drawing out the natural taste of the ingredients.


Commitment to Ingredients
For the financiers, they use 100% almond powder from Marcona almonds, known as the "Queen of Almonds," the highest quality available. This creates rich richness and moist mouthfeel.
Additionally, all special financiers are coated with coating using the finest Valrhona chocolate from France. These are items where you can enjoy chocolate's lingering aftertail while being baked goods.

For sweetness, BROWN TABBY chose Hon Wako sugar rather than white sugar. While white sugar is uniform in sweetness and easy to handle, it can sometimes flatten the aroma and aftertaste of the ingredients themselves.
Hon Wako sugar is made through a less refined process that quietly retains the original flavor and richness of sugarcane. The sweetness doesn't come forward too much but spreads gently in the mouth and quickly fades away.
This allows the depth of Marcona almonds, the milky taste of butter, and the aroma of Valrhona chocolate to be clearly felt, one by one. Rather than asserting with sweetness, they listen carefully to the voices of the ingredients. This way of thinking forms the foundation of BROWN TABBY's flavor creation.

The Story Behind the Name
The shop name "BROWN TABBY" comes from the cat coat pattern known as "kijitora" (brown tabby). Like a cat that is carefree yet sometimes comes close to people, they hope this shop can also become part of the lives of those who visit.
To further enjoy the taste of baked goods, the shop also offers specialty coffee. Using beans from Brazil, Ethiopia, and Colombia in a 1:1:1 ratio, they are finished with French roast to accompany the sweetness of baked goods and the aftertaste of butter. As a cup that doesn't assert too much but quietly accompanies, you can enjoy it together with the baked goods.
