BRULEE Ice Cream Makes Its Department Store Debut at Hankyu Umeda

A premium ice cream brand that spent seven years in development and over 1,000 trial batches perfecting its signature caramelized crust is heading to Osaka for its first-ever department store event. BRULEE, produced by Ohayo Dairy Products, will hold a limited pop-up at the Hankyu Umeda Main Store from July 8 to 14, 2026.

Seven Years of Development, One Signature Texture

BRULEE is built around a single distinctive feature: a thin, crackling caramelized surface applied to milk ice cream using a proprietary, patented production method developed by Ohayo Dairy. The caramelized layer uses a custom blend of multiple sugars, dialed into what the brand describes as the optimal ratio for flavor and texture. Breaking through it reveals creamy fresh-milk ice cream underneath.

The ice cream launched in 2017 after roughly seven years of development, and in 2022 won the Grand Prix at Japan's largest frozen food and ice cream popularity vote. It has since attracted a following among visitors from Taiwan, South Korea, Hong Kong, and other parts of Asia through social media.

The pop-up brings together the full BRULEE lineup alongside two items making their debut at this event: an eat-in dessert supervised by a noted Tokyo patissier, and a new pistachio flavor exclusive to this location.

Eat-In Limited: BRULEE CRÈME DE MARRON, Supervised by équilibre's Junji Tokunaga

Junji Tokunaga, owner-chef of the Tokyo patisserie équilibre in Meguro, created this eat-in dessert in collaboration with the BRULEE team. Known for his philosophy of "balance" in pastry, Tokunaga built the dish around French-sourced chestnut paste applied over BRULEE MILK, one of the standard flavors. Inside the chestnut cream sits a marron glacé with a gentle sweetness and a light fresh cream. The combination of caramelized crust, dense milk ice cream, and chestnut layers is available only at this event.

BRULEE PISTACHIO uses a blend of multiple pistachio varieties, roasted to bring out a rich, naturally fragrant flavor without any artificial colorings or flavorings. The new flavor will be sold exclusively at the Hankyu Umeda store during the event period.
