COCORIS' Iconic Sand Cookie at Tokyo Station Gets an Even More Delicious Upgrade

The Sand Cookie from nut-inspired confectionery brand COCORIS — available at Gransta Tokyo inside Tokyo Station — has been renewed with refined recipes and improved production methods. The treat has held the top spot in Tokyo Station's limited souvenir sales ranking for six consecutive years and has been a customer favorite since the brand launched in 2020.

A Cookie Elevated by Better Balance Between Texture and Chocolate

Returning to the brand's founding concept of "tasting the flavors of sun-kissed nuts," COCORIS has revisited the cookie dough, baking method, and chocolate coating process to better bring out the natural character of the nuts.

The updated dough features a lighter, more satisfying crunch, achieved through a thorough review of ingredients, ratios, and the mixing process. The baking method was also revised — with adjustments to temperature management and heat distribution — ensuring the crispy texture comes through in every bite. The chocolate coating method was also changed to achieve more uniform coverage, enhancing the cohesion between cookie and chocolate.

Hazelnut

Rich, deeply flavored hazelnut is blended into a smooth cocoa-scented paste, wrapped in French milk chocolate, and sandwiched between two light, crispy cookies. The sweetness is kept restrained, letting the natural nut aroma and its lingering finish take center stage.

Raspberry

A vibrant raspberry paste is enveloped in gently sweet French milk chocolate and sandwiched between the same crispy cookie layers. The bright acidity and fruity character of the raspberry make themselves known from the very first bite.

Ingredient selection, blending ratios, and the mixing process were all reviewed. By carefully bringing the components together to achieve an ideal dough consistency, the natural aromas of eggs and nuts are sealed into the dough rather than lost during baking.

2. Texture — A Crunchier Bite

To maximize the potential of the improved dough, the baking process was also refined. Temperature control and heat application were modified, and equipment adjustments ensure that heat circulates gently and evenly throughout the dough — delivering a noticeably crispier texture with each bite.

3. Balance — Enhancing the Harmony of Cookie and Chocolate

The chocolate coating method was revised to achieve more uniform coverage, preserving the light crunch of the cookie while enhancing the overall unity of cookie and chocolate. This improved balance allows the nut filling's flavor to come through more clearly.
