Kyoto Ichinoden Releases Saikyo-zuke Potato Chips as a New Kyoto Souvenir on November 3

Kyoto Ichinoden (京都一の傳), a Kyoto brand specializing in Saikyo-zuke, will release a new product, Saikyo-zuke Potato Chips (西京漬けポテトチップス), on Tuesday, November 3, 2026 (Culture Day, a national holiday). The chips make use of the richness of Saikyo miso and come in three flavors: Dashi, Shichimi, and Kujo Negi. The package follows the design of the brand's signature Saikyo-zuke, "Kura Miso-zuke" (蔵みそ漬), adding a playful touch to its long-established look.

At ¥290 (tax included) per bag, the chips can be carried at room temperature, making them an easy Kyoto souvenir. They are available in stores only. A shop that has worked with fish for a century presents this new souvenir as a challenge toward its next hundred years.

Making Saikyo-zuke More Accessible: A New Kyoto Souvenir

Kyoto Ichinoden has long delivered the flavor of Saikyo-zuke, a traditional part of Kyoto's food culture, as a Saikyo-zuke specialty shop. The brand wanted more people to enjoy Saikyo-zuke and the white miso culture of Kyoto that supports its taste, so it developed potato chips, a snack enjoyed across generations.

With the taste of the chips themselves as the first priority, the richness unique to Saikyo miso comes in three flavors: "Dashi," "Shichimi," and "Kujo Negi." They are suggested as souvenirs from a trip to Kyoto, and also as an everyday snack or a small gift, offering a new way to feel close to Kyoto's food culture.

Three Flavors That Bring Together Saikyo Miso and Kyoto

The lineup combines the richness of Saikyo miso with ingredients and flavors associated with Kyoto in three varieties.

Dashi

The mellow richness of Saikyo miso is combined with the umami of dashi. The flavor takes its theme from dashi, which is essential to Kyoto's food culture.

Shichimi

The aroma and heat of shichimi togarashi (seven-spice chili pepper) accent the richness of Saikyo miso. Chili peppers grown in Kyoto are used, giving a sharp spiciness along with the flavor of shichimi.

Kujo Negi

The richness of Saikyo miso is combined with the flavor of Kujo negi (Kujo green onion), a traditional vegetable representing Kyoto. With each bite, the rich aroma of Kujo green onion spreads.

A Package Based on the Signature "Kura Miso-zuke," Adding a Playful Touch to a Long-Established Look

The package is based on the design of Kyoto Ichinoden's signature product, "Kura Miso-zuke."

While keeping the distinctive elements of Kura Miso-zuke, such as the white band across the center, the brush lettering, and the Kyoto Ichinoden logo, the design adds a playful touch suited to potato chips. Dashi is based on a golden color, Shichimi on enji (deep crimson), and Kujo Negi on moegi green, a design that can be enjoyed even when the three are lined up side by side.

A gift box set containing all three flavors is also available. It is packed in the same gift box used for the Kura Miso-zuke gift products, and is suggested for home use as well as an easy, Kyoto-style gift.
