IMM Food Service Co., Ltd. (headquartered in Kanazawa City, Ishikawa Prefecture; President: Naofumi Mizuguchi), which operates Kanazawa Kirari Sushi, will sell a special ehoumaki on February 3, 2026 (Tuesday), coinciding with Setsubun.
Kirari's ehoumaki features 11 ingredients, including fresh bluefin tuna and snow crab, primarily using seafood from the Sea of Japan. This popular Setsubun item has received great reviews from customers every year. This year, eel has been newly added, enhancing the richness and bringing out the umami of each seafood ingredient. It is offered as a luxurious roll befitting this once-a-year milestone.
11 Premium Ingredients Create an Exquisite Ehoumaki
Ehoumaki is a good luck charm traditionally eaten on Setsubun. It is believed that eating it while facing the lucky direction of the year in silence brings good fortune. For Setsubun 2026 on February 3 (Tuesday), the lucky direction is south-southeast. Kirari will sell this ehoumaki on that day only, marking the arrival of Risshun (the first day of spring).
Kirari's commitment is having dedicated buyers visit fishing ports near Kanazawa to select the freshest seafood available each day. This year, in addition to seafood such as fresh bluefin tuna, snow crab, yellowtail, shrimp, and salmon roe, eel has been newly incorporated, creating an even more luxurious flavor profile. The addition of the rich-tasting eel adds depth to the individual seafood flavors, allowing customers to enjoy a more fulfilling experience with each bite.

Furthermore, by balancing classic ingredients such as herring roe, egg, shiso leaves, cucumber, and kanpyo (dried gourd strips), the roll offers not only taste variations but also textural diversity.
