The café 囲炉裏と甘味 gururi inside Nagaragawa Seiryu Hotel (長良川清流ホテル) in Gifu is bringing back a special program that drew a strong response last year. For one day, the café welcomes Asako Harada (原田麻子), a leading figure in the world of kakigori (Japanese shaved ice) who is also widely known through her media appearances. On the day of the event, Harada herself shaves each bowl by hand, offering a chance to enjoy her finely crafted shaved ice.

Since June 1, the café has been collaborating with Asako Harada — owner of the shaved ice specialty shop 氷舎 mamatoko, who has appeared on the TBS program 『マツコの知らない世界』— to serve indulgent shaved ice for adults.

On Saturday, August 1 only, Harada stands in the kitchen herself, delivering fluffy bowls shaved with her practiced technique. The event drew attention last year as the first of its kind held in Gifu Prefecture, and it returns this year with a carefully prepared lineup.

糀摘 (Kojimari)

Kojimari shaved ice with amazake milk, shio-koji cream, blueberry and strawberry

A dish that reimagines long-beloved amazake and shio-koji with a modern patisserie sensibility. The base is a gently sweet, alcohol-free amazake milk. On top sits a special cream made from drained yogurt kneaded with shio-koji. Seasonal blueberries and strawberries from Gifu Prefecture are added in two textures — fresh and as compote. The natural sweetness of the ingredients and the moderate saltiness of the shio-koji play off each other in a gentle dessert shaved ice for grown-ups. (Regular service of this item has ended, but it is being revived exclusively for the event.)

燦桃 (Santo)

Santo shaved ice with ripe peach compote and tomato sorbet

The fully ripe peach that has been popular every year is presented in a more refined style this time. Rich, juicy peach flesh (compote) is paired with a vivid tomato sorbet, adding a surprising, refreshing note. A hint of lemon vanilla milk ties the peach's mellow aroma and the tomato's acidity together, leaving a pleasant finish down to the last bite — a cooling dish well suited to the hot season.

琥珀 (Kohaku)

Kohaku shaved ice combining Gifu miso cream and mango

A sweet-and-salty shaved ice that combines a "miso cream" made with Gifu Prefecture miso and tropical mango. Dry-roasted walnuts are coated with a special miso caramel carefully thinned with molasses, then layered generously with rich miso cream. The mellow mango milk hidden inside the ice meets the deep richness of the miso, coming together into a refined, dessert-like flavor — a new take on the possibilities of traditional ingredients.

Saiyu build-your-own shaved ice with Ibi matcha, Gifu strawberry and ayu monaka

A hands-on shaved ice that uses delicate white milk ice as a canvas for freely depicting Gifu's rich bounty. It features the deep green of fragrant 揖斐抹茶 (matcha from Ibi), the vivid red of juicy 岐阜苺 (Gifu strawberry), and 鮎最中 (ayu monaka), which symbolizes the clear Nagara River. Selected seasonal ingredients are scattered together with playful toppings. As an optional hidden accent, you can add the local specialty めしどろぼ, whose unexpected richness layers sweet and salty notes for a flavor with real depth. It is a one-of-a-kind shaved ice that you build yourself.

Kakigori specialist Asako Harada

Born in Kanagawa Prefecture in 1983, Asako Harada is a mother of one. She became captivated by shaved ice about 20 years ago after eating an authentic matcha kakigori in Kyoto. While working as a fashion magazine writer and at a real estate development company, she saved up and, in 2016, opened her long-desired shaved ice shop 氷舎 mamatoko. She still researches and enjoys shaved ice every day.
