A new sake "AKIGASUMI" has been born from the first-time collaboration between established fragrance house Nippon Kodo (Ginza, Chuo-ku, Tokyo) and Miyaizumi Meijo, the Fukushima Aizu-Wakamatsu brewery known for the popular brand "Sharaku." The pasteurized bottled product (720ml) goes on sale from 11:30 AM on September 15 (Monday, National Holiday) through the Ginza Rangetsu official online shop and in-store at Ginza Rangetsu and Kikizake-dokoro Sake no Ana, limited to 300 bottles.
The most distinctive feature of this sake is the unprecedented brewing method using three types of yeast (F7-01, 1801, Kirameki yeast) simultaneously in a single tank. This challenging technique was adopted to pursue aromatic complexity. By carefully harmonizing yeasts with different fermentation speeds, layers of aroma that change over time from top notes to middle and last notes are realized. Additionally, the rice ingredients use "Fukunoka" for soft umami and "Gohyakumangoku" for sharp finish, achieving a balance of transparent umami and crisp clarity.
The product name "Akigasumi" comes from the haze over mountains at spring dawn, the scene of colorful clouds overlapping in layers. This worldview of transparency and complexity is directly reflected in the bottle design.
The aroma and elegance are not overly emphasized, showing an elegant and graceful emergence. With changes in temperature and time, new aromas and flavors continuously reveal themselves. It pairs well with a wide range of dishes including sashimi, fried foods, vegetables, meat, and fish, making it recommended as a meal companion.
