AP Holdings Co., Ltd. (headquartered in Toshima Ward, Tokyo; Chairman and President Hisashi Yoneyama) is opening Urano Yamano Kinoko Nagoya on July 8, 2026 (Wednesday), on the site of its former izakaya Tsukada Nojo Meieki Sasajima, which closed in April 2026, in Nagoya, Aichi Prefecture.
The restaurant produces AP Holdings' Tokyo-born Urano Yamano Kinoko brand under license and will be operated by FOOLISH Co., Ltd. (headquartered in Chiyoda Ward, Tokyo; President Keisuke Takamura), the same company that runs the brand's existing licensed locations in Umeda, Osaka, and Sannomiya, Hyogo.
About Urano Yamano Kinoko
Urano Yamano Kinoko is AP Holdings' hot pot specialty brand, which first opened in Shibuya, Tokyo, on December 3, 2021.
Hot pot is often associated with Chinese cuisine, but this restaurant brands its dish "Japanese-style hot pot": the broth builds on Japan's dashi culture, using kombu and shiitake mushroom stock, then blends in medicinal herbs and spices from China, Taiwan, and other regions for a distinctive flavor.

Hot pot set
The main ingredient is a colorful basket of mushrooms. Arranged like a bouquet, the "mushroom basket" that arrives at the table — often the first thing guests want to photograph — uses roughly 14 rare mushroom varieties sourced from contracted domestic producers. As the hot pot comes together, staff introduce each mushroom's name and characteristics one by one, turning the meal into a dining experience filled with surprise and discovery.
By centering the hot pot on rare mushrooms that are typically in short supply, the restaurant highlights mushrooms that usually peak in winter while operating as a hot pot specialist serving unusual varieties year-round. It has grown to three directly run locations in Tokyo — Shibuya, Ebisu, and Kichijoji — plus two licensed locations it produces in Umeda, Osaka, and Sannomiya, Hyogo.

Interior and Atmosphere at the Nagoya Location
The interior carries through the brand's signature design, with extensive use of woodgrain and natural materials that create an organic atmosphere, as if standing among roadside trees. The moment guests step inside, the aroma of mushrooms and spices fills the air, adding to the restaurant's distinctive sense of place.

At the seasoning station, which adds to both the playful spirit of Urano Yamano Kinoko and the flavor of its Japanese-style hot pot, guests can freely customize their bowl with a selection of condiments and spices chosen to pair well with the broth. Start with the staff's recommended blend, then adjust the sweetness, spiciness, and flavor to your own taste.
