A craft chocolate brand based in Aomori has announced the launch of its first cookie tin. "Watashi, Raw Chocolate," the chocolate label under SWEETEST DAY (operated by Clockup Co., Ltd.), is releasing the "Chocolate Cookie Tin" — a special assortment of seven varieties of baked goods made using the brand's own Bean to Bar raw chocolate.

The moment you open the lid, a rich cacao aroma fills the air. Each of the seven cookies is baked individually to deliver a distinct texture — crisp, crunchy, or crumbly — along with the unique character of the chocolate used. The collection was designed to bring the artistry of Bean to Bar chocolate into the world of baked confections, drawing out cacao flavor in a way that only a dedicated craft chocolate maker could achieve.

The Story Behind the Product

SWEETEST DAY's journey into raw chocolate began with a personal story. The brand's founder, who had an atopic constitution and a chocolate allergy, started studying cacao with the hope of creating chocolates that children with similar sensitivities could enjoy. During a trip to New York, the founder discovered a chocolate that caused no allergic reaction — and learned it was Raw Chocolate. After training with a local chocolatier, the founder returned with both the techniques and the philosophy behind the craft.

The new Chocolate Cookie Tin represents a culmination of that experience — an effort to express the depth of cacao through baked goods. Rather than treating chocolate simply as something sweet, the brand aims to share the aroma and individuality of cacao with a wider audience.

A Commitment to Bean to Bar

In Bean to Bar production, every step — from selecting cacao beans to roasting, grinding, refining, and molding — is handled in-house by the chocolatier. This end-to-end control allows for meticulous attention to quality at every stage. The additional Raw processing keeps the cacao beans at low temperatures throughout, preventing the degradation of nutrients that can occur through heat. The result is a chocolate rich in cacao polyphenols, vitamins, minerals, and enzymes.

For the cookie tin, each variety is adjusted in chocolate ratio and baking time, so that every cookie offers a different aroma, finish, and texture.

Design That Tells a Story

The tin's design is inspired by "the moment your heart stirs upon encountering something delicious" — specifically, the scene of reaching out to touch a cacao pod for the first time. The brand, which places great importance on ingredients and raw materials, chose to feature the cacao fruit itself as the central visual motif.

The illustration draws on the warm and gentle aesthetic of picture books and fairy tales, with soft brushwork throughout. Playful details — such as a cherry pendant hanging from a bag or a bookmark slipping slightly out of a book due to gravity — invite viewers to step into a storybook world and discover something new with each look.
