Tokyo Station's Melt-in-Your-Mouth Sweets Arrive in Kansai for the First Time
FONDAN is a new brand that offers "melt-in-your-mouth sweets" with a focus on how they dissolve on the tongue, making the most of homemade raw butter made from the raw milk of pasture-raised cows in Hokkaido.
Fondan Sand wraps melting raw butter caramel in ultra-thin langue de chat baked into a three-dimensional shape. The crisp, fragrant, light langue de chat layered with the melting raw butter caramel makes it FONDAN's signature sweet. Fondan Galette is a fragrantly baked galette coated with smooth raw butter fondant, combining the aroma of baked sweets with the smooth melt of the raw butter fondant.
Fondan Chocolat Sand, a new winter-limited product released on November 1, will also be available. Melting raw chocolate is generously sealed inside ultra-thin langue de chat, pairing the crisp, fragrant cookie with smooth, creamy chocolate. The different textures and flavors layered together make it a raw chocolate sandwich unique to FONDAN.
This is the first opportunity to try FONDAN sweets, which until now could be picked up only at Tokyo Station, in Kansai.

Fondan Chocolat Sand (Winter-Limited, New Product)
A raw chocolate sandwich that wraps melting raw chocolate in a fragrant crisp
Ultra-thin langue de chat cookies are shaped three-dimensionally and generously filled with melting raw chocolate.
The raw chocolate is made with the company's own pasture-raised cow milk, which has higher milk fat and more richness in winter. It brings out the milk's rich flavor while finishing with a smooth melt, leaving a gentle milky aftertaste with each bite.
The langue de chat is baked as thin as possible, giving it a rich butter aroma and a light, crisp texture. By wrapping rich, melting raw chocolate in the thin, light langue de chat, the sweet offers a contrast of "crisp" and "melting" in a single piece. Thin, light, and three-dimensional.

Raw Butter With a Long, Rich Aftertaste
FONDAN's original "raw butter" was made possible by a group that handles everything from producing ingredients such as milk and eggs to planning and manufacturing. Inspired by French "raw butter," it was developed by drawing on the group's strengths of raising its own cows and owning dairy production facilities. Freshly milked pasture-raised cow milk is given only the minimum necessary low-temperature pasteurization and prepared without homogenization, preserving the gentle flavor and delicacy of the raw milk. It feels light the moment it enters the mouth, then the richness spreads gradually, leaving a long, rich aftertaste.

The sweets themselves are also made with careful attention to temperature to preserve the delicate flavor of the raw butter. For Fondan Sand, the raw butter is melted in using the residual heat of the cooked caramel. For Fondan Galette, it is added at the finishing stage, while the initial heat is being taken off. By preserving the flavor of the ingredients as much as possible, FONDAN achieves its "lightness and deep richness."

Ingredients for Delicious Sweets
Among the group's "three principles of delicious sweets," the principle of "using better ingredients than anywhere else" led the group to make top-quality ingredients with its own hands.
Based on the idea of "regenerative agriculture," which restores the global environment, the group practices pasture-based dairy farming in which cows graze freely, as well as free-range poultry farming. As cows eat grass and move around freely, the soil becomes richer and the grass absorbs more carbon dioxide. Cows raised without stress produce flavorful, delicious milk. The pursuit of deliciousness has led to ingredients that are gentle on both the planet and animals.
Circulating without waste, from feed to manure
As snacks for the hens, the group feeds cookies that could not be sold as products from its confectionery factory, along with strawberry hulls left over from making cakes (within 20% of their diet). This produces flavorful eggs suited to making sweets. It is also an environmentally friendly initiative that helps reduce food waste and garbage.

What Is "Raw Butter"? The Thinking Behind Its Development
FONDAN began when the group learned that France has a butter called "raw butter," made only from cream that has not undergone heat treatment for refining, and wondered whether a group that handles everything from pasture-raised cow milk to finished sweets could make it too.
When tasted, "raw butter" leaves a long, rich aftertaste and has a character completely different from ordinary butter or cultured butter. The group makes its raw butter carefully in-house from freshly milked pasture-raised cow milk, using only the minimum necessary sterilization and a non-homogenized process, keeping the softness of the raw milk and protecting its delicate flavor. Using this original "raw butter" made it possible to create sweets with a long, rich aftertaste.
