Gokan, a Western confectionery brand based in Kitahama, Osaka, that focuses on domestically sourced ingredients, is launching a new souvenir it's positioning as a new standard for Osaka gift-giving: Kyaramoko Uma!!, on sale from August 1, 2026 (Saturday).
Careful ingredients meet a fluffy, melt-in-the-mouth dacquoise
Kyaramoko Uma!! is a dacquoise made with two kinds of almonds, from Sicily and California, combined with black soybean kinako (roasted soybean flour) and kudzu starch, then baked light and airy for a "fuwa, moko" — fluffy, plush — texture.
The rich, toasty aroma of the almonds layers with the deep, savory-sweet flavor unique to black soybean kinako and the light, smooth melt of the kudzu starch, creating a texture that seems to dissolve the moment it touches the tongue.

Tucked inside the dacquoise shell is a generous filling of housemade caramel cream: burnt sugar simmered slowly with Hokkaido cream and butter, then rested overnight. Its smooth melt and deep caramel flavor bring out the toasted notes of the almonds and black soybean kinako.
