Amuse: Simmered Round Eggplant and Zucchini, Shojin-Style
Round eggplant and zucchini, which signal the arrival of autumn, are lightly fried and simmered in a shojin dashi carefully drawn from dried shiitake and kombu. The umami-rich vegetables are layered with the toasty aroma of golden sesame powder from Kondo Seibaku in Fuso Town, Niwa District, Aichi Prefecture, and the gentle richness of tororo kombu, finished with a light accent of cherry tomato.

Appetizer: Twenty-Four Seasons Vegetable Palette
A composition of vegetables that delicately reflects the changing seasons. Kombu-cured turnip and mushroom bring deep umami, Inuyama-grown jinenjo (mountain yam) is lightly fried for a rustic flavor, and asparagus offers a gentle texture, all accompanied by the refreshing note of rice-bran pickles. Lotus root in yukari vinegar and sweet potato simmered in orange add color and depth, served with a tofu sauce for added variety.

Autumn Harvest Soup with Yama-Uni-Scented White Miso
Built on a shojin dashi base layered with the mild sweetness of hato miso for a white-miso finish. The dish carries a gentle aroma of "yama-uni," a seasoning passed down in the Kawada district of Sabae, Fukui Prefecture, and gains depth from kuruma-fu (ring-shaped wheat gluten), a domyoji dumpling, and, depending on the season, ginkgo nuts from Sobue. A nori tuile is crumbled in at the end, layering aroma and texture with each bite.
