Patisserie Minimal, the specialty chocolate and patisserie shop located near Soshigaya-Okura Station, is set to offer a spring-limited "Fruit and Chocolate Parfait – Citrus –" from April 4, 2026. The parfait showcases juicy sweet summer mandarin (natsumikan) and Kiyomi orange alongside aromatic chocolate, built up across 15 individual components for a layered, luxurious experience.
Wakayama-Grown Citrus and 80% Ghana Cacao Chocolate

The parfait makes generous use of sweet summer mandarin and Kiyomi orange carefully grown at Zenbee Farm in Wakayama Prefecture. Lemon from the same farm appears in the cream and chips as well, layering multiple citrus varieties to create a fragrant, multi-dimensional tartness throughout.
For the chocolate component, an 80% high-cacao chocolate made from Ghana-sourced cacao takes center stage, offering a nutty richness and a pleasant bitterness. The fresh acidity of the citrus and the depth of the chocolate work together for a flavor that is both light and satisfying.
15 Components, Each Bite a Different Experience

The parfait is assembled with layers of varying textures and aromas. The top is decorated with lemon chips, a matcha and bergamot meringue, and a spun sugar ornament that adds both visual elegance and flavor accents.
A mascarpone cream combining lemon and olive oil — with a subtle salty note — is nestled inside the pastry shell and within the glass itself, lending three-dimensional depth to each spoonful. Midway through the glass, cassata incorporating chocolate chips, lemon peel, and cranberry provides a satisfying richness. Sakura bean paste ice cream and a rosemary honey jelly weave in delicate spring aromas, ensuring that the flavor remains engaging all the way to the last bite.
Together, sweetness, acidity, bitterness, aroma, and texture interlock in multiple layers to complete this single glass.
