NEMU RESORT (Shima City, Mie Prefecture), set within Ise-Shima National Park, is selling a well-received SDGs product at Dining Satoyama inside Hilltop House: "Lemon-Flavored Cheesecake Shake (NEMU style)," made using off-spec cheesecake from Toba Hotel International, a facility in the same group whose cheesecake is a longtime specialty. Rather than discarding cheesecake that comes out over-browned or cracked during production, the resort turns it into a new sweet, helping cut down on food loss as part of an upcycling effort.

Turning Toba Hotel International's Signature Cheesecake Into a New Drink

Toba Hotel International's cheesecake, with its cinnamon-scented tart crust layered with a rich cream-cheese filling, has long been a beloved specialty of the hotel. For the "Lemon-Flavored Cheesecake Shake (NEMU style)," the cheesecake is separated into its tart layer and its baked filling, and the flavor of each is used to build a single shake.

The cheesecake filling is blended with lemon peel, milk, and vanilla ice cream into a smooth shake. While keeping the rich, distinctive flavor of cheesecake, the addition of lemon's refreshing tang makes it easy to enjoy even in the hot season. Whipped cream is topped with sliced cheesecake, and the cinnamon-scented tart layer is crumbled on top, adding fragrance and a crisp texture.
