This season's desserts feature Uji matcha sourced exclusively from "Chashō Shimizu Ikkoen," a long-established Kyoto tea wholesale merchant founded in 1945. The matcha is stone-ground using traditional methods — a process so meticulous that a single stone mill produces only about 500g per day — yielding a rare and highly aromatic variety. The pairing of this deeply flavored matcha with Pastel's signature mild sweetness forms the heart of the fair's lineup.
