A new counter sushi restaurant, Sushi Nobutaka (鮨寛学), is opening in Osaka's Kitashinchi district in April 2026. The restaurant offers a 15-piece premium sushi course for just ¥4,400 (tax included) — a quality level typically associated with courses priced above ¥10,000 — plus all-you-can-eat seafood broth ramen at the end of the meal.
The founder trained at Sushi Kazue (鮨和恵), a restaurant run by a female sushi chef that attracted significant media attention and had a three-month waiting list right from its opening. The new restaurant drew over 10,000 website visits during its pre-opening phase.
Authentic Counter Sushi at ¥4,400

The 15-piece sushi course at Sushi Nobutaka uses high-grade ingredients — including tuna typically found at premium restaurants — all at the accessible price of ¥4,000 (¥4,400 tax included).
At the end of the course, guests can enjoy unlimited ramen made entirely from that day's seafood broth, prepared using fish scraps from throughout the meal.
