A new counter sushi restaurant, Sushi Nobutaka (鮨寛学), is set to open in Osaka's Kitashinchi district in April 2026. The restaurant was founded by a chef who trained at Sushi Kazue (鮨和恵) — a sushi restaurant that became fully booked for three months immediately after opening and drew significant media attention for its female sushi chef. Even before Sushi Nobutaka's official opening, a pre-opening announcement attracted more than 10,000 online accesses.
The restaurant's main offering is a 15-piece authentic sushi omakase course priced at ¥4,400 (tax included). The course features high-grade tuna typically found at upscale establishments, delivering a dining experience that would normally cost upwards of ¥10,000 at a considerably lower price point.

Following the sushi course, diners can enjoy unlimited servings of seafood ramen. The ramen is made with a 100% seafood broth prepared from the fish and shellfish trimmings of the day, rounding off the meal with a distinctive, flavor-rich finish.

The restaurant also features a dish inspired by the chef's home prefecture of Aichi.

Sushi Nobutaka operates on a reservation-only, two-seating-per-day basis.
