Beef Kitchen Stand, a restaurant chain known as a casual meat bar, has begun serving a new "Sugoi Tonkotsu Shoyu Ramen" (Incredible Pork Bone Soy Sauce Ramen) at all its locations starting February 25, 2026.
Background: Filling the Gap Left by a Beloved Bowl
The chain had previously offered a niboshi (dried sardine) ramen, which was discontinued. The dish had been popular enough to prompt many customers to express their disappointment and hope for a revival, with comments such as "It was the perfect way to end a night out" and "I'm so sad it's gone."
Rather than simply creating a replacement, the team set out to develop a bowl that would surpass the original.
Six Months of Development
Development reportedly took approximately six months, with the team focusing on three key elements: soup concentration, the sharpness of the soy sauce, and how well the broth coated the noodles. The final recipe brings together rich tonkotsu broth, bold soy sauce seasoning, and medium-thick noodles.


The soy sauce component comes from Takei Shoten, a Yokohama-based sauce maker with over 150 years of history, whose "soy sauce kaeshi" (concentrated seasoning sauce) is combined with a premium tonkotsu soup developed by Beef Kitchen Stand itself. The pairing aims for a layered flavor profile — the depth of pork bone stock meeting the fragrance and complexity of long-aged soy sauce — resulting in a bowl described as having a refined, lingering finish rather than simply being rich.
The soup was created with an emphasis on quality over cost efficiency, prioritizing ingredients to produce a depth of flavor immediately noticeable from the first sip.
Designed to Stand on Its Own
While Beef Kitchen Stand is primarily known as a dining spot for steak and drinks, the new ramen was developed to be more than just a late-night "shime" (meal-ender after drinking). The goal was a bowl capable of drawing visitors for ramen alone — or holding its own as a satisfying main meal.

The ramen is available at all Beef Kitchen Stand locations, with the exception of the Noge Ichiban Street branch. Sales began on February 25, 2026.
