CÉ LA VI TOKYO, located on the 17th and 18th floors of Tokyu Plaza Shibuya, is launching a limited-quantity premium shaved ice menu starting July 1, 2026 (Wednesday). The desserts are made with natural ice sourced from 蔵元 八義 in Hokuto City, Yamanashi Prefecture.

The shaved ice is distinguished by its snow-like, airy texture and striking crystal-clear appearance. The natural ice is produced at an altitude of 1,300 meters on the southern slopes of the Yatsugatake mountain range, where it is slowly frozen using only the cold of deep winter — resulting in ice of exceptional purity. Skilled craftspeople cut and handle each block by hand.

At CÉ LA VI TOKYO, this ice is elevated into visually dramatic patisserie-style desserts, complete with branded chocolate plaques, flaky pie layers, and intricate toppings. Each shaved ice comes with a separate rich specialty syrup or jelly that guests can pour on themselves mid-way through, creating a surprising "flavor transformation" (味変) as they eat. A side of pickled vegetables serves as a palate cleanser.

The desserts are served in limited daily quantities, with a sky-high view of Shibuya as the backdrop.

A side of lightly pickled Chinese cabbage, with a subtle saltiness that highlights the sweetness, serves as a palate cleanser. The experience continues right through to the final bite.

Rich mango ice, ripe fresh mango, and smooth almond cream are layered beneath a crispy mille-feuille garnished with edible flowers. A separate passion fruit sauce, when added, bursts with acidity and deep sweetness, instantly shifting the flavor to something tropical and refreshing. Lightly pickled Chinese cabbage adds a gentle saltiness that further brings out the mango's natural sweetness. The light crunch of the pastry and the dramatic flavor shift continue until the very last bite.

Skilled craftspeople monitor the weather each day, carefully cutting the ice by hand. When shaved, this ice transforms into a snow-like, delicate texture that melts instantly on the tongue.
