Popular Karuizawa Bakery "Mel" Makes Its Tokyo Debut at Azabu-Juban's BIRTH LAB on June 29

Mel, a popular bakery based in Karuizawa, Nagano Prefecture, is holding a one-day pop-up event in Tokyo for the first time. The event takes place on Monday, June 29, 2026 at BIRTH LAB in Azabu-Juban, running from 11:30 AM to 6:00 PM (or until sold out).

About Mel

The bakery's name comes from the Danish word for "flour." In keeping with this, Mel places great emphasis on its flours and ingredients, carefully baking each item by hand.

The owner trained for 15 years at the celebrated Karuizawa bakery "haluta karuizawa" before opening Mel independently in November 2023. Since then, the bakery has developed a devoted following—drawing lines from early morning—among both local residents and visitors from further afield. The owner's aim is to create breads that sit naturally in everyday life, the kind people can enjoy day after day without growing tired of them.

On the day of the event, all breads will be baked fresh that morning at the Karuizawa bakery and delivered directly to Azabu-Juban.

The motif for Mel's logo. Instead of sheet butter, the baker hand-folds individually flattened butter into each layer, creating a texture that is both crispy and airy.

A rich bread with cheese kneaded generously into more than half of the dough.

Yamashoku (Mountain Loaf)

Yamashoku

A light, fluffy pullman loaf made with fermented butter, cane sugar, and milk, drawing out the natural sweetness and rich flavor of the ingredients.

Kakushoku (Square Loaf)

Kakushoku

Made using the same ingredients as the Yamashoku, this square-shaped loaf has a chewier, denser texture.

On the same day, a "COFFEE MEETUP" event—a regular fixture at BIRTH LAB—is scheduled from 3:00 PM to 4:00 PM. Hand-drip coffee prepared by the BIRTH LAB community manager will be on offer, providing a relaxed spot to enjoy alongside a selection of fresh bread.
