GRADATIONS, the dining venue on the 41st floor of Nagoya's Midland Square, is refreshing its afternoon tea and parfait menus for a limited season. From March 2 (Monday) to April 26 (Sunday), 2026, the restaurant will serve an afternoon tea themed around "spring ingredients and cheese," with savory tartines as the centerpiece, alongside a seasonal parfait featuring strawberries and cherry blossoms.

Located 200 meters above the ground at the landmark Midland Square in Nagoya, GRADATIONS offers sweeping sky views alongside its seasonal menus.

Fromage Tartine & Mignardises

The afternoon tea at GRADATIONS is characterized by its focus on savory satisfaction rather than sweets. The savory course centers on tartines that pair fromage with spring seafood and vegetables, alternating between cold and warm preparations to deliver varied flavors across each dish.

Highlights include a Brie de Meaux tartine with firefly squid and cherry tomatoes in ajillo style, a Burrata tartine with shirasu in arrabbiata sauce, and a Ricotta cheese plate with Spanish mackerel, fuki miso, and lemon oil — all making use of seasonal spring ingredients. A Mascarpone scone with caramelized new onions and a Cheddar hot sandwich with clams and spring cabbage add warmth to the lineup.

Rounding out the savory section are a Fromage Blanc soup with Miura vegetables, a Camembert pie with oscietra caviar, egg, and lime, and a Gorgonzola tartine featuring Mikawa beef — creating a course-like rhythm with depth and contrast.

Seasonal Parfait

The seasonal parfait, "Sakura Shizuku" (cherry blossom dewdrop), takes inspiration from droplets falling from cherry blossoms. It layers cherry blossom and mascarpone mousse, cherry blossom jelly, and strawberry confiture to balance delicate sweetness with soft floral fragrance.

Inside the glass, layers of joconde biscuit, cherry blossom an, matcha mousse, and fresh cream create variation in flavor and texture. Three ice creams — strawberry, salted vanilla, and matcha — are added as a finishing touch.

The parfait is available during both lunch and dinner service, and can also be enjoyed alongside champagne in the evening.
