Starting March 2, 2026 (Monday), four locations of the dashi shabu-shabu restaurant "Okaka" will begin offering the spring-limited dish "Madai Mirai and Naruto Fresh Wakame Dashi Shabu". The menu runs through early May and is priced at 4,290 yen (tax included) per person, with a minimum order of two servings.
The star of the dish is "Madai Mirai," a branded sea bream raised in Sukumo Bay, Kochi Prefecture. Known for its firm, refined flesh and clean umami flavor, the fish is paired with fresh wakame seaweed from Naruto, Tokushima Prefecture. Naruto wakame, shaped by strong ocean currents, is thick yet tender with a rich oceanic aroma. Accompanying seasonal vegetables include kyona flower (京菜花) and other spring greens.
About "Madai Mirai"

"Madai Mirai" is an environmentally conscious farmed sea bream raised in Sukumo Bay, located within Ashizuri-Uwakai National Park in Kochi Prefecture. Automated feeding systems and underwater cameras are used to deliver optimal feed amounts based on the fish's appetite, minimizing waste and protecting water quality. The operation uses fish-meal-free feed to reduce pressure on marine resources, while working toward ASC certification and EU certification. On December 25, 2024, the facility obtained EU export certification for aquaculture products.
Raised one by one with care, each fish features well-balanced fat content and plump flesh. The bay's location, where nutrient-rich mountain runoff meets the Kuroshio Current from the Bungo Channel, creates ideal conditions for consistently fresh, high-quality fish.

About "Okaka"

"Okaka" takes its name from the Japanese word for bonito flakes, and true to that name, the restaurant shaves premium "honkare-bushi" (fully fermented dried bonito) to a thickness of just 0.01 mm using an in-house shaving machine. The restaurant's signature dashi shabu broth is made without additives or flavor enhancers, using an original blend finished tableside with additional bonito flakes for each guest. Thinly sliced meat and seasonal vegetables are briefly dipped in this rich broth, delivering the restaurant's core concept of "eating the dashi."
