Shimonoseki Shunpanro Abeno (Abeno-ku, Osaka; General Manager Kenji Shimazu), a fugu and seasonal-cuisine restaurant operated by Shunpanro Co., Ltd., is serving a new "Summer Menu" built around in-season hamo (pike conger) from July through Monday, August 31.

Hamo: A Traditional Taste of Osaka Summer, Shaped by Skilled Craftsmanship

Hamo has long been part of Osaka's summer food culture. As the heat intensifies in July, the fish develops a richer flavor and a more delicate sweetness.

Hamo is filled with countless tiny, hard bones, so advanced knife skills are essential to prepare it safely and deliciously. The restaurant's chefs carefully perform honekiri (bone-cutting), a precise traditional technique that makes more than 24 cuts within roughly 3 centimeters (1 sun) of flesh while leaving a single layer of skin intact.

The menu includes hamo-chiri, briefly blanched in hot water for a soft, delicate texture, and a sukiyaki-style hot pot served in a golden, specially prepared broth — dishes that draw on the refined techniques passed down at the long-established Shunpanro, offering a luxurious taste of summer to enjoy with all the senses.
