Wolfgang's Steakhouse, the New York-born steakhouse brand by Wolfgang Zwiener, is set to open Wolfgang's Steakhouse Nagoya in September 2026 — its first location in the Tokai region. The new branch will be housed on the first floor of Nagoya Kanko Hotel, at 1-19-30 Nishiki, Naka-ku, Nagoya.
Like the existing locations, the Nagoya branch will feature USDA Prime-grade beef, in-house dry-aged steaks, a full seafood menu, and a wine selection of over 1,000 bottles from around the world, served in an elegant dining environment.
Quality, Aging, and Cooking
Wolfgang's Steakhouse uses only USDA Prime-grade beef — the highest quality tier certified by the U.S. Department of Agriculture. The beef is sourced fresh (never frozen) and dry-aged in a dedicated in-house aging room for 28 days under controlled temperature and humidity. During the aging process, natural enzymes tenderize the meat while proteins break down into amino acids, deepening the umami flavor. The dry-aged cuts are then sliced thick and cooked at 900°C, served directly on a hot plate to the table — with a crisp, caramelized crust and juicy interior.

Two additional concept formats also operate in Tokyo: Wolfgang's Steakhouse Signature in Aoyama offers a more upscale take on the brand, while Wolfgang's Steakhouse TEPPAN in Ginza focuses on teppanyaki-style preparation of the brand's prime beef.
