Buffet & Bar "VIEW & DINING THE SKY"

On the 17th floor of The Main building, VIEW & DINING THE SKY offers Japanese, Western, Chinese, and dessert dishes prepared at a live stage kitchen, with 360-degree panoramic views of Tokyo.
Live cooking stations include teppanyaki featuring premium domestic beef and Kuroge wagyu hamburg steak, as well as sushi with red vinegar-seasoned rice, and freshly fried tempura made with seasonal ingredients.

Teppanyaki
Chefs prepare premium domestic beef steaks and Kuroge wagyu hamburg steak to order at the grill. The "Kuroge wagyu teppan shabu" — finished with a sweet and savory sukiyaki sauce — is among the most popular items, enjoyed not only for its flavor but for the sizzling sounds of the live kitchen.
Sushi
Classic varieties like tuna and salmon roe along with seasonal selections are prepared to order by sushi chefs. The rice is seasoned with red vinegar made from sake lees, which adds depth and umami to each piece. Guests can choose their preferred ingredients through a conversation with the chef.

Tempura

The tempura counter features shrimp and classic ingredients alongside seasonal choices. Japanese cuisine chefs fry selected ingredients to order using rice oil and rice flour, producing a light, crispy texture that's best enjoyed fresh from the fryer.
Hotel New Otani's signature "Super Series" sweets and Pierre Hermé Paris creations are also available for dessert.
