Buffet Dining Kessel (2F) at Shin-Yokohama Prince Hotel is set to hold the "Nagasaki Fair" from Wednesday, April 1 to Sunday, May 31, 2026.

The restaurant regularly hosts regional fairs showcasing Japan's diverse food culture, and this edition turns the spotlight on Nagasaki Prefecture — a region renowned for its unique culinary heritage shaped by centuries of exchange with overseas cultures.
For this fair, the head chef personally traveled to Nagasaki to research the local food culture and ingredients firsthand, visiting producers and markets to carefully select what would be featured on the menu.
The lineup includes some exceptionally hard-to-find ingredients rarely seen in the Kanto region. Among them is "Yukou," a near-mythical citrus fruit recognized by the Slow Food Foundation's "Ark of Taste" as a food worthy of preservation; Kanbita pork, a breed raised on rice for a refined, delicate flavor; Unzen aka-beef, prized for its rich, full-bodied taste; and vanilla beans from Nagasaki Prefecture, one of the extremely rare domestic sources of this ingredient. These carefully sourced ingredients are used to recreate the flavors of Nagasaki in an approachable buffet format, inspired by what the chef discovered on location.
In addition to the Nagasaki-themed dishes, the buffet also features the restaurant's signature domestic beef roast carving, fresh sushi prepared by a sushi chef right in front of guests, and desserts finished tableside by a pastry chef.

Herb mackerel is raised on a proprietary feed incorporating Western herbs, giving the fish a clean, light fat with a sweet, umami-rich flavor free from any unpleasant fishiness. It is paired with a dressing made from "Yukou" — the elusive Nagasaki citrus — for a refreshing acidity and refined aroma.

Shimabara natto miso has been a beloved accompaniment to rice in the Shimabara region for generations. Made with raw koji that retains its enzymes, it has a distinctly savory, complex depth. Here it is paired with a Parmigiano-Reggiano risotto, where the richness and acidity of the cheese marries beautifully with the umami of the natto miso and the accent of ginger.
