Komugino Inc. (Headquarters: Chiyoda-ku, Tokyo; Representative Director: Naoto Sasayama) will open Uchidaya Higashi-Isahaya Store (Location: 401-4 Ono-cho, Isahaya City, Nagasaki Prefecture) on Thursday, February 5, 2026, as the third phase of the rebranding project for Uchidaya, a long-established udon restaurant originating from Fukuoka City that joined the group in March 2025.
This store transforms the existing "Udon Hana Isahaya Store," one of the Uchidaya group locations, into a "New Uchidaya" that incorporates comfort and design suited to modern lifestyles. Following the successful rebranding of Tatara Store and Kaita Store in Fukuoka Prefecture, this marks the first renewal store to open in Nagasaki Prefecture.

From Fukuoka Success to Nagasaki - Background of the Third "New Uchidaya" Expansion
Uchidaya is a long-established udon brand that has expanded mainly in Fukuoka. With its signature fluffy, chewy homemade udon made from carefully selected wheat flour and natural dashi combining kelp, bonito, and dried sardines, it has long been cherished as an "everyday udon restaurant" close to the local community. The restaurant's cafeteria-style offering, which includes not only udon but also a wide range of rice bowls and set meals, is one of its distinctive features.
In March 2025, Uchidaya Co., Ltd., which operates the stores, became a subsidiary of Komugino Inc., launching a rebranding project under the banner of "regional brand revitalization." In November of the same year, the first phase renovated and reopened "Uchidaya Tatara Store" as the flagship location in its birthplace. This was followed in December by the second phase renewal of "Uchidaya Kaita Store."
Both stores maintained Uchidaya's core values of "dashi" and "udon" while improving ease of use, menu composition, and store environment. As a result, customer visits more than doubled compared to before the renewal, achieving strong performance.
Building on these successes, "Uchidaya Higashi-Isahaya Store" now opens as the first format conversion store in Nagasaki Prefecture. As the third phase of rebranding, this expansion brings Uchidaya's strengths to Nagasaki, continuing efforts to create stores that stay close to the local community.

"Uchidaya Higashi-Isahaya Store" offers a menu centered on Uchidaya's signature natural dashi and homemade udon, with set meals featuring varied portions and combinations at everyday-friendly prices.
The new "Mini Mini Set" features popular katsu-don and niku udon in half sizes with dessert included, making it an excellent value set. It's perfect for those who want to enjoy different flavors in smaller portions or prefer lighter meals. The mini bowl can be changed to options like tendon or negitoro-don.
"Japanese-style Champon Udon" is an original Uchidaya creation combining natural dashi made from kelp, bonito, and dried sardines with plenty of vegetables. It's served as a set with enhanced-flavor kashiwa rice.
"Kashiwa Udon," symbolizing Fukuoka's food culture, has been enhanced with increased chicken and improved compatibility with the dashi. The set with kashiwa rice offers both familiarity and satisfaction as a standard menu item.
Additionally, as a seasonal offering, the Higashi-Isahaya Store exclusively features an "Oden" menu. Classic ingredients including daikon radish, egg, konnyaku, thick fried tofu, and shirataki are carefully prepared in Uchidaya's signature dashi. Available as individual items or as a value set featuring all five varieties, it's easy to enjoy with udon or as an additional dish.
