ZEN HOUSE (現代里山料理 ZEN HOUSE), the contemporary satoyama cuisine restaurant located in Higashi-Ginza at Millennium Mitsui Garden Hotel Tokyo, is now accepting reservations for its summer "kori-gashi" (shaved ice desserts). Two new flavors are available this season, each crafted by the restaurant's pastry chef.
Shaved Ice Desserts from ZEN HOUSE's Pastry Chef
Tousui (透翆) – ¥2,200 (tax included)
"Tousui" brings together a rich matcha sauce made with carefully selected Uji matcha and fluffy shaved ice from deep Shinshu natural spring water. Yuzu sorbet adds a refreshing lift, while arare (rice crackers) provide a toasty, crunchy accent that gives the dish a distinctly Japanese character. Just before serving, fresh lemon is grated tableside, releasing a bright aroma that draws out the depth of the matcha.
Tourei (桃麗) – ¥2,400 (tax included)
The fan-favorite white peach shaved ice returns this season. A homemade sauce crafted from one whole domestic white peach forms the base, layered with aromatic vanilla beans and a jasmine tea jelly. The graceful sweetness of the white peach mingles with the lingering fragrance of vanilla and jasmine, creating a refined dessert for adults with an elegant appearance and well-rounded flavor.
