Hotel New Otani Tokyo is holding a gourmet fair spotlighting the rare brand beef Tottori Wagyu, prepared in a range of styles across its restaurants. Tottori Prefecture has been developing "Shoku Paradise Tottori" as a food-and-tourism brand strategy, pairing sightseeing with the prefecture's culinary appeal to welcome visitors from Japan and abroad. Through the initiative, the prefecture continues to highlight the quality of its agricultural, livestock, and seafood products, nurtured by its rich natural surroundings, while expanding its reach overseas.

Tottori Wagyu: A Renowned Brand From a Historic Cattle-Raising Region

Tottori Wagyu beef

Tottori Wagyu traces its lineage to the sire Ketaka, considered the root of many of Japan's brand beef cattle. Tottori Prefecture has been known as a wagyu-producing region since the Edo period, blessed with clear air, mineral-rich groundwater, and quality rice straw for feed. Raised without stress amid these favorable natural conditions, Tottori Wagyu is rich in oleic acid, said to contribute to its smooth mouthfeel. Its deep red meat, evenly marbled with white fat, gives the beef a melting texture and a flavor that fills the mouth.

Shinkansen pear

Developed by the Tottori Prefectural Horticultural Experiment Station and registered in February 2008, the Shinkansen pear (新甘泉) is a variety unique to Tottori Prefecture. Low in acidity, it boasts an intensely rich sweetness with a sugar content of 13 to 15 degrees. Despite being a red-skinned pear, it retains the crisp, refreshing texture inherited from the Twentieth Century pear. Its name comes from the abundant juice that bursts forth like a spring the moment it's bitten into.
