Kyoto Tokyu Hotel (Horikawa-Gojo, Shimogyo-ku, Kyoto) is holding an "Abalone and Autumn Flavors Fair" at its Chinese Restaurant Hoshigaoka from Tuesday, September 1 to Saturday, October 31, 2026. The two-month fair puts abalone, prepared by steaming, simmering, and grilling, at the center of both course and a la carte menus, paired with autumn ingredients such as chestnut, kabocha squash, and ginkgo nut.
Abalone has long been regarded in Chinese cuisine as a "treasure of the sea," prized for banquets and special occasions for its rich umami and delicate texture. Because the ingredient takes on different characteristics depending on the cooking method, it is considered one of the best ways for a chef to showcase technique. For this fair, it is combined with in-season chestnut, kabocha squash, and ginkgo nut, bringing together flavors from the sea and the mountains as autumn deepens.
