Minimal's Spring-Limited Lemon Gateau Chocolat Features Tree-Ripened Lemons from Zenbei Farm

Japan-based specialty chocolate brand Minimal - Bean to Bar Chocolate - is launching a spring-limited "Gateau Chocolat Soft -Lemon-" at three Tokyo locations starting April 1, 2026. The treat will be available at the Yoyogi Uehara, Azabudai Hills, and Sengawa stores through approximately the end of May 2026.

A Spring Confection That Delights from the Moment the Box Is Opened

The gateau chocolat combines the bright aroma and fresh acidity of lemon with the depth of chocolate in a simple, straightforward composition. The sponge is infused with the flavor of tree-ripened lemons from Zenbei Farm in Wakayama Prefecture, and layered with a fruity lemon chocolate ganache. Two layers of chocolate glaze — a blonde chocolate with caramel-like richness and a white chocolate — are draped on top. Slices of dried lemon and edible flowers are delicately arranged on the surface, creating a look that brightens the moment the box is opened.

Each bite delivers the pleasantly tart acidity of lemon alongside the complex depth of cacao, resulting in an elegant treat that balances lightness and richness. With its beautiful presentation, it also makes a thoughtful gift.

Tree-Ripened Lemons from Zenbei Farm — a Citrus Farm with Over 200 Years of History in Wakayama

Zenbei Farm's tree-ripened lemons are harvested in earnest from late March. Lemons harvested before the end of the calendar year are known for their refreshing aroma, but those left on the tree into the new year develop a higher sugar content hidden beneath the acidity, resulting in a richer, more concentrated flavor.

These special lemons are carefully segmented and used in both the sponge and ganache. The sponge is also made with generous amounts of lemon juice, and dried, powdered lemon peel is incorporated to bring out the full character of the fruit.

Fruity Peruvian Cacao Ganache and a Two-Layer Chocolate Glaze

The ganache uses chocolate made from Peruvian cacao, known for its sweet-tart flavor reminiscent of dried apple and berries. It is crafted to amplify the fruity quality of the lemons through a complementary interplay of acidity.

On top, a blonde chocolate with caramel-like richness and a white chocolate are applied in two layers, adding complexity that highlights the lemon's tartness.
