The all-day dining restaurant Pergola on the 15th floor of Nagoya Marriott Associa Hotel is holding its most popular annual event, the "Spring Hokkaido Buffet – Roast Beef & Dolce –," from March 26 (Thu) to June 3 (Wed), 2026.
The buffet showcases the rich bounty of Hokkaido's seas and land, featuring seasonal flavors unique to this time of year.
Boiled Crab and Seafood Rice Bowl
Boiled crab — available all-you-can-eat with a crab vinegar dipping sauce — is offered during weekday dinners and on weekends and holidays (available at both lunch and dinner from April 26 to May 6).

During weekday lunches, diners can build their own seafood rice bowl by freely topping it with ingredients such as salmon roe (ikura), salmon, minced tuna (negitoro), shrimp, and baby scallops. (From April 25 to May 6 lunches, a pre-arranged mini seafood bowl is served instead of the customizable option.)

Roast Beef and Hokkaido Specialties
At the performance area, a whole roast beef is carved tableside — the buffet's number-one crowd-pleaser. During the Hokkaido Buffet, it is accompanied by Hokkaido-grown Western horseradish (raifort), along with a rich gravy sauce and a grated ponzu sauce.

Also prepared right in front of guests is a seafood yakisoba stir-fried noodle dish finished with Hokkaido-grown kelp soy sauce.

The noodle corner invites guests to compare three regional Hokkaido ramen styles: Asahikawa soy sauce ramen, Hakodate salt ramen, and Sapporo miso ramen. Other Hokkaido classics on the menu include soup curry, zangi (Kushiro's signature fried chicken), and a salmon chanchan-yaki style gratin.

The popular "freshly piped Mont Blanc" is prepared tableside — strawberry and chestnut Mont Blanc cream piped directly over cherry blossom ice cream.

Café Drinks and Free-Flow Plan
Limited-edition drinks for the event include "Caramel Corn Tea," with the sweet flavors of corn and caramel, and "Tiramisu Latte." An ice-flavored latte customizable with your choice of flavored syrup and a classic café latte are also available.

The free-flow drink plan, which covers beer, cocktails, and non-alcoholic cocktails, now includes syrups from "1883 MAISON ROUTIN." Guests can choose from approximately 18 flavors — including pear, ume plum, pineapple, and violet — and mix them with alcohol or carbonated drinks to craft their own cocktails.
