Japanese Cuisine Hanasanshou on the 25th floor of Park Hotel Tokyo in Shiodome is offering a limited-time seasonal kaiseki course, "Sakura Kaiseki at Japanese Cuisine Hanasanshou," beginning Thursday, March 12, 2026.

The course centers on seasonal ingredients unique to the spring renewal season, including bamboo shoots, mountain vegetables such as angelica tree shoots, firefly squid, and sakura shrimp. The menu also features dishes that evoke the cherry blossom season — vegetables arranged to resemble sakura blossoms and a simmered dish inspired by sakura mochi.

Throughout the course, colors and aromas evoking sakura in bloom, along with the fresh flavors of spring ingredients, are carefully woven into each dish. The course invites guests to savor the essence of spring with all five senses.
