A new Okayama souvenir made with sake lees from a local sake brewery, "Sake Lees Madeleine Marukasu" (酒粕マドレーヌ まる粕), goes on sale on Friday, October 30, 2026.
JR West Okayama Branch (JR西日本岡山支社) and JR Service Net Okayama Co., Ltd. (株式会社ジェイアールサービスネット岡山) develop products together with local companies and producers as part of the Furusato Okoshi project (ふるさとおこしプロジェクト), and offer them under the "JR PREMIUM SELECT SETOUCHI" brand. This madeleine was developed in cooperation with Miyashita Shuzo Co., Ltd. (宮下酒造株式会社) and Takehisa Yumeji Honpo Shikishimado Co., Ltd. (竹久夢二本舗敷島堂株式会社), using sake lees from Okayama local sake.
The product was created to take a fresh look at the value and flavor of sake lees as a food ingredient and to generate new demand for it. By making sake lees more familiar, the project aims to share the appeal of Okayama's sake culture, make effective use of sake lees and help reduce food waste, while also communicating new value and appeal of the region.
About the Madeleine
Okayama has long been a region where sake brewing thrives, and many breweries carry on that culture. "Sake Lees Madeleine Marukasu" is a souvenir that lets people experience Okayama's sake culture up close.
The batter is made with flour from Okayama-grown wheat and topped with a jelly made by adding Japanese sake to sake lees, then carefully baked. Combining the sake lees from Miyashita Shuzo with the confectionery-making skills of Shikishimado, the madeleine offers a rich aroma and a gentle sweetness, with a flavor unique to Okayama.
