The event is themed around the energy of a fish market, with fresh tuna and seafood shipped directly from Toyosu Market taking center stage.


One of the highlights of the Summer Buffet 2026 is a tuna-cutting performance show — a live demonstration that also proved popular at the GW dinner buffet. Under the "SHIOMI Fish Market" concept, chefs fillet fresh tuna and other fish right before guests' eyes, creating a lively and memorable atmosphere. The tuna is sourced from Ishiji (石司), a Toyosu Market wholesaler known for its expertise in selecting and aging premium bluefin tuna. From freshly cut sashimi and hand-pressed sushi to a customizable seafood rice bowl ("kaisen nokkédon") where guests pile their choice of toppings, the event offers a full celebration of the sea.
A cutting service is also on offer for dishes such as domestic roast beef with two sauces, tuna kama garlic roast, and bone-in roasted lamb, all carved tableside by chefs in classic hotel dining style.
The venue also features a teppanyaki corner where squid, grilled corn, and summer vegetables are cooked on the griddle, the sizzling aromas adding to the market atmosphere. A shaved ice corner lets guests choose from four fruit-pulp syrups — strawberry, mango, melon, and blue Hawaii — for a cool summer treat.
