Pastry Chef Hirokazu Sato has crafted this stunning Amaou Parfait using carefully selected "Amaou" strawberries, known as the king of strawberries. The sweets selection, supervised by Chef Sato, features an array of treats using seasonal strawberries including shortcake, tarts, and lychee panna cotta. The savory selection showcases the French chef's expertise with items like strawberry and mozzarella caprese and mini burgers, creating an exquisite balance between sweet and savory. While enjoying the breathtaking views of Yokohama's cityscape and ocean, guests can indulge in roast beef and sparkling wine (free flow), along with their choice from 20 varieties of Amchu tea. On weekends and holidays, a special "Crème d'Anjou" is served with warm berry sauce. About Pastry Chef Hirokazu Sato
Hirokazu Sato began his career as a pâtissier at "Maxim de Paris" in Ginza. During his 10-year tenure, he became fascinated with the profound world of French pastry. He then moved to France, where from 2000 he worked as sous-chef at "Pâtisserie Sadaharu AOKI Paris" since its founding, and contributed to launching multiple stores in Japan.
His philosophy centers on carefully bringing out the natural qualities of ingredients while combining different textures to create cakes with concentrated flavors. His signature style features simple, stylish designs that avoid excessive decoration, earning high praise from many customers. His specialty lies in creating chocolates and macarons that bring out rich aromas and depth, continuously delivering memorable flavors with delicate textures to numerous fans.
In August 2025, he joined Yokohama Bay Sheraton Hotel & Towers as Pastry Chef. On the international stage of Sheraton, where guests gather from around the world, he utilizes his global sensibility and experience to deliver unique sweets befitting Yokohama.
