The star of the set is the "Miyazaki Mango and Okinawa Pineapple Parfait Sous le Ciel Bleu," which showcases sun-ripened mangoes from Miyazaki Prefecture and pineapple from Okinawa Prefecture.

The parfait balances savory and sweet in a single glass. Perched on top is a lightly salted tomato quiche topped with a pineapple and basil marinade. Diners can enjoy this as a separate side piece alongside the sweet parfait layers below — a combination reminiscent of an afternoon tea-style savory-sweet pairing.
The layers inside the glass include a jelly infused with passionfruit and Earl Grey, along with an original milk ice cream made by slowly simmering cardamom. The cardamom lends a subtle, pleasant spice that complements the juicy tropical fruits.
Weekday-Only Parfait Lunch
The lunch set pairs the parfait with an appetizer and salad buffet featuring around 18 varieties, plus a mini pasta of the day. Coffee or tea is also included to round out the meal.
