At Patisserie SATSUKI, four matcha-themed sweets have arrived — from the ever-popular shortcake to creative combinations featuring traditional Japanese ingredients — offering a comforting moment in the midst of busy everyday life.

Japanese Castella Meets Matcha Shortcake

Shin-Edo Matcha Castella Shortcake — ¥1,836 (takeout price)

The Shin-Edo Matcha Castella Shortcake features a castella made with eggs from Nagasaki Prefecture, gently sweetened with wasanbon sugar and citrus honey. Layered on top are matcha custard cream, black sugar bean paste, and shiruko jelly. Wasanbon fresh cream and the soft-baked castella sponge work together with a refined matcha accent to create a dessert with impressive visual depth.

The Classic Matcha Pie pairs Shizuoka-grown matcha and house-made black sugar syrup with fresh cream from Omuta, Kyushu. The Shin-edo Matcha Shortcake is built on two sponge layers — matcha and wasanbon — made with "genmai eggs," and filled with black sugar bean paste, black sugar jelly, soy milk white ganache, and rich matcha custard cream. Shiratama rice dumplings and lychee add a final touch to this blend of Japanese and Western flavors.

The Shin-Edo Millefeuille sandwiches a golden, flaky pastry crust with rich custard cream made from Nagasaki "taiyoh tamago" eggs and a black sugar sponge. Matcha custard cream, black sugar bean paste, and a hint of salt from Aogashima's "Hingya no Shio" round out a millefeuille with deep Japanese character.
