Hotel New Otani (Tokyo, Makuhari, and Osaka) will host the "Strawberry, Matcha & Mango Sweets Fair" from May 7 to June 30, 2026, featuring a lineup of special desserts built around three seasonal flavors at restaurants throughout each property.

Hotel New Otani regularly organizes sweets fairs centered on seasonal fruits. The current "Amaou Sweets Fair," originally scheduled through the end of March, was extended to May 6 due to its popularity. This strawberry, matcha, and mango edition marks the first time all three flavors have been combined into a single themed fair.

At Hotel New Otani (Tokyo and Makuhari), the central attraction is the "Super Sweets Buffet 2026 – Strawberry, Matcha & Mango," a buffet where guests can try short cakes in all three flavors side by side, along with refreshing sorbets and a range of hot dishes including Japanese, Western, and Chinese options and sandwiches.

Shin-Edo Kakigori Matcha

"Nikko Natural Ice" is produced using a traditional method in which spring water from a mountain valley is slowly frozen by natural cold temperatures and preserved in an icehouse packed with sawdust. The result is shaved ice with a cotton-candy-like, melt-in-your-mouth texture. Nestled inside are small daifuku mochi and anko jelly, with a matcha kudzu sauce poured over the top. The interplay of fragrant matcha and sweet red bean paste reflects the sensibility of a dedicated Japanese dining venue.

Note: Hotel New Otani Osaka uses natural ice from the Southern Alps and Yatsugatake.

The bakery Patisserie SATSUKI is introducing two matcha sweets that blend Japanese and Western techniques. The "Shin-edo Matcha Short Cake" uses two types of fluffy sponge made with matcha, wayo-bira sugar (traditional Japanese sugar), and brown rice eggs. Layers of black sugar anko, black sugar jelly, mild soy milk white ganache, rich matcha custard cream, chewy mochi balls, and juicy lychee create a striking cross-section. The cake is decorated with a fragrant matcha macaron and white chocolate.

The "Shin-Edo Matcha Castella Short Cake" is built on a castella sponge made with premium sun-dried eggs from Nagasaki, baked gently with wayo-bira sugar and mandarin honey. It is then layered with matcha custard cream, black sugar anko, and a red bean porridge jelly for a simpler but deeply satisfying matcha dessert.

The Hotel New Otani's signature pancake achieves its characteristic fluffiness by blending three cheeses—ricotta, cream cheese, and mascarpone—alongside the hotel's original "white cereal" grain mix for a lighter bite. One of the pancakes is caramelized on the surface for a contrast in texture. The dish is served with matcha warabimochi, mochi balls, and red bean porridge jelly, then finished with a matcha sauce for a dessert that brings together multiple traditional Japanese ingredients.

This short cake uses juicy Shizuoka-grown mask melon alongside domestically produced mango prized for its aromatic quality and high sugar content. The sponge is made with "brown rice eggs" from chickens raised on pesticide-free brown rice, giving it a soft and flavorful base. The fresh cream comes from Kyushu Omuta-grown cream, blended with wayo-bira sugar and vanilla beans for a sophisticated sweetness that lets the fruit shine. Hotel New Otani's strawberry short cake uses Grand Marnier in the fluffy sponge and Kirschwasser in the fresh cream for added depth of flavor. The long-established "Napoleon Pie" layers crispy, light puff pastry with a generous amount of vanilla-scented custard cream. The gentle sweetness of the custard paired with the bright, mildly tart strawberries makes for a refined and elegant dessert.
