Atmos Italian Dining, the all-day dining restaurant on the 40th floor of Conrad Osaka in Nakanoshima, Kita-ku, Osaka, is holding an autumn Italian buffet themed "La Dolce Vita" from Monday, October 5 to Sunday, December 13, 2026. The buffet centers on the food cultures of Tuscany in central Italy and Liguria on the Mediterranean coast, along with other parts of Italy, and brings in the flavors of autumn.
"La Dolce Vita" is Italian for "the sweet life" or "a rich life." The buffet expresses it as a time to enjoy a meal with someone important around seasonal ingredients and local dishes. This autumn, Tuscan regional cooking that values the natural flavor of ingredients such as meat and seasonal vegetables, and Ligurian dishes that make use of seafood and herbs, are joined by autumn ingredients such as chestnuts, mushrooms, and eggplant, presenting the appeal of Italian food as it changes with the seasons.

From Tuscany, the buffet includes a traditional salad that combines bread with colorful vegetables, the Tuscan-style panzanella salad with tomatoes and red onions, and a cacciatore of young chicken simmered in Tuscan red wine, with the sweetness of mushrooms and chestnuts layered on top. From Liguria, on the Mediterranean, come dishes that make use of seafood and herbs, such as frisceu, a fried bread with anchovies and herbs, and oven-baked sustainable salmon with an olive crust, clams, and spinach. Desserts include traditional Italian sweets such as panforte (a chocolate cake with cinnamon and orange) and a chestnut and hazelnut panettone.
Executive Chef Tomoki Yamada, who has a background in Italian cuisine, brings in seasonal ingredients while honoring the food culture handed down in each region, expressing an autumn flavor unique to Conrad Osaka.
On weekdays, the buffet is served in a semi-buffet style: guests choose one dish from five main dishes and help themselves to as many appetizers and desserts as they like. On weekends and holidays, it is a full buffet where everything from appetizers and hot dishes to desserts is all-you-can-eat.
The restaurant sits about 200 meters above the ground with a panoramic view of Osaka's cityscape.

Crispy Sautéed Sea Bream With Mussels, Potato Fondue, and Ragù of Osaka-Grown Amameid Tomatoes (アマメイドトマト)
Sea bream cooked at a low temperature is sautéed with thinly sliced bread until fragrant. The dish contrasts the light texture of the bread with the plump flesh of the sea bream. Mussels, Osaka-grown cherry tomatoes, olives, and herbs are added, giving the dish a feel of Ligurian food culture. The umami of the seafood, the mellowness of the potato fondue, and the fresh acidity of the tomatoes come together in a dish for the autumn appetite.

Handmade Trenette Pasta With Genovese Sauce, Potato Confit, Green Beans, and Parmigiano Cheese
Following Ligurian tradition, this dish serves homemade trenette (linguine) with Genovese sauce. The homemade sauce is made with plenty of basil, pine nuts, and two cheeses, Parmigiano and Pecorino, and is paired with potatoes and green beans. The fresh aroma of basil is layered with the richness of the two cheeses, the toasty flavor of the pine nuts, and the sweetness of the potatoes.

Eggplant From Yuki Farm in Nara Prefecture Stuffed With Veal, With Pecorino Toscano, Spinach, and Veal Jus
Inspired by the ripieno (stuffed) dishes enjoyed in Tuscany, this autumn dish stars seasonal eggplant. Eggplant carefully grown at Yuki Farm in Nara Prefecture is filled with a ripieno made from veal, Parmigiano, herbs, and other ingredients. The juicy eggplant is joined by the umami of the veal and the aroma of herbs, and Pecorino Toscano, a sheep's milk cheese from Tuscany, adds richness as a finishing touch.

"Porchetta" Herb-Wrapped Roast Skin-On Pork With Rosemary Potatoes, Grilled Lemon, and Tasmanian Mustard
A standard on the Atmos Italian Dining menu. Skin-on meat is slowly roasted in the oven, giving a crisp surface and a moist interior. The umami of the pork blends with herbs and spices in this traditional pork dish from central Italy.

Japanese Black Beef Tagliata Steak With Selvatica Salad, Rosemary Potatoes and Parmigiano, Salsa Verde, and Honey Balsamic Vinegar
Another standard on the Atmos Italian Dining menu. Juicy grilled beef is finished simply with salt and good olive oil. The rich sweetness of the beef fat is balanced by the strong bitterness of selvatica (wild rocket). (Extra charge: +¥2,000)

Executive Chef Tomoki Yamada

Tomoki Yamada started his career in 2001 at an Italian restaurant and gained experience at restaurants and foreign-affiliated luxury hotels in various places. In April 2017, he became head chef of C:GRILL, the wood-fired grill restaurant that opened together with Conrad Osaka, and later also served as the hotel's sous chef. In November 2022, he was appointed executive chef of Conrad Osaka. Driven by a passion for offering guests more than they expect, he creates dining experiences that inspire guests' senses, using ingredients carefully selected for their origin and season, together with skill, a delicate sense, and creativity. He currently oversees the kitchens of all the hotel's restaurants, bars, and banquet facilities.
