The Fiorentina Pastry Boutique at Grand Hyatt Tokyo in Roppongi is bringing back its popular "Summer Sweets Collection" from June 16 (Tue) to September 15 (Tue), 2026. This year's lineup spans 16 items showcasing summer fruits such as Shine Muscat, mango, and peach — from chilled glass desserts to premium shortcakes and gift-ready assortment boxes.

Refreshing Glass Sweets: Verrines
Eight varieties of "Verrine" glass sweets are available, with summer fruits layered with jelly and mousse to highlight the freshness of each ingredient. Four new flavors join the lineup this year, alongside returning favorites.

All verrines are priced at 1,200 yen (tax included). Available 10:00 AM to 8:00 PM.
Crème Anjou Peach Soup (New) — 1,200 yen
Fresh peach is blended into a smooth soup and paired with airy, snow-like crème anjou. White peach pieces tucked inside the soup add a pleasant texture, while the mellow richness of the crème anjou harmonizes with the seasonal peach for a juicy, refreshing taste.

Exotic Tiramisu (New) — 1,200 yen
Tiramisu soaked in lychee liqueur is layered with a passion fruit gelée containing gold leaf, then topped with an exotic sauce made from tropical fruits. The contrast in colors and the glimmer of the gold leaf create a visually impressive glass dessert.

Rose Watermelon Jelly & Lychee Raspberry Mousse (New) — 1,200 yen
Rose and raspberry mousse is topped with round-cut watermelon and rose gelée, decorated with rose petals and chocolate shaped to resemble watermelon seeds. The crisp, juicy watermelon, smooth mousse, and fragrant rose aroma come together in a delicate, cooling presentation.

Mango Pudding à la Mode (New) — 1,200 yen
A rice-flour sponge soaked in exotic tropical syrup is piled with pudding, fresh cream, and generous slices of fresh mango. The firm, egg-rich pudding is balanced by lightly sweetened cream and the intensely sweet mango — a tropical summer dessert with a classic touch.

Shine Muscat Verrine (Renewed) — 1,200 yen
A perennial summer favorite: fresh Shine Muscat paired with non-alcoholic Chardonnay sparkling wine gelée, with vanilla mousse and Shine Muscat pieces enclosed in the glass. This year the mousse is upgraded with premium Tahitian vanilla for a more refined, elegant flavor.

Melon, Honey Lemon Jelly & Almond Milk Mousse (Renewed) — 1,200 yen
Almond milk mousse, two-colored melon balls, and honey lemon jelly are layered in a glass, topped with a choux-pastry honeycomb and bee decoration. The rich fragrance of two melon varieties, the milky mousse, and the clean acidity of honey lemon make this a refreshingly light summer treat.

Pudding à la Mode — 1,200 yen
Returning this summer, this retro classic is built on the hotel's original strawberry shortcake base, soaked in house-made berry syrup and topped with a slightly firm caramel pudding, fresh cream, cherry, melon, mango, and more.

Grand Premium Shortcake Series
The Grand Premium Shortcake series uses top-quality ingredients, including Tahitian vanilla beans and fresh cream made from Jersey milk, for a one-notch-above experience. Three flavors are on offer this summer — mango, peach, and mixed berry — each decorated with colorful feather chocolate.
